What sparked your interest in becoming a barista?
During a study break I decided to get a barista job, as I was fascinated by coffee. It started with seeing Barista Championship routines on YouTube. At the time I liked coffee but didn't know it could go that far. I ended up going to sit in on someone's UKBC practice, and I realised then that it was something I wanted to do seriously.

What's your favourite coffee filter recipe, and why?
I'm usually brewing lightly roasted coffee in an open-bottom Orea, with the aim to achieve a clean, sweet cup. For a single cup, I use a 12g dose, with my brew ratio and water temperature being decided based on the solubility of the coffee - higher temperature and wider ratio for light roasts. A typical recipe might be 12:200, delivered in 3 pours, with a 2 minute brew time.

How do you share your passion for coffee with others, whether within the industry or the wider community?
I love to deliver the Omakase service at Sale Moon. Every season has a new menu of coffee & coffee-adjacent beverages, and we see both casual-drinkers and coffee enthusiasts make bookings. Because it's a more structured service style, we can be more creative and present coffee beverages that maybe wouldn't work on our regular menu but provide a really interesting coffee experience for the guest. It's always my aim to give the guests a really good idea of what coffee can be.
