Brewing Perfection with Ryojji Hope: A Coffee Masters Recipe

Brewing Perfection with Ryojji Hope: A Coffee Masters Recipe

As we approach the much-anticipated London Coffee Festival, coffee enthusiasts around the world are gearing up to witness and participate in brewing excellence. Among the luminaries of the festival is Ryojji Hope, the 2024 Coffee Masters Champion, known for his innovative and precise coffee techniques. This year, we've had the privilege of collaborating with Ryojji to create a stellar recipe for most washed coffees that coffee aficionados can try at home or in their cafes.

Here's an in-depth look at the recipe Ryojji has shared, along with additional insights to elevate your coffee experience.

Ryojji Hope's Winning Coffee Recipe
Ingredients and Equipment:

  • 25g of Washed Coffee Beans: Choose beans that suit your palate, preferably medium-high acidity for a vibrant cup.
  • Grinder Setting: 15 clicks on the Kabuto grinder.
  • Water: 200ml at 90°C for the initial brew and 100ml for bypass.
  • Brewer: Hario Switch.

Brewing Instructions:

  • Prepare the Coffee: Weigh out 25g of your chosen washed coffee and grind it to a medium-coarse consistency (15 clicks on the Kabuto grinder).
  • Set Up the Brewer: Pour the ground coffee into the Hario Switch. Shake the brewer gently to level the coffee bed, ensuring the Switch is closed.
  • Start the Brew: Begin your timer and pour 200g of 90°C water into the Switch using a steady circular motion. This helps ensure even coverage and extraction.
  • Steeping: Allow the coffee to steep without interference.
  • Agitation: At 1:45, gently swirl the brewer to gather any grounds stuck to the walls, promoting a more consistent extraction.
  • Release: At the 2:00 mark, open the Switch to let the coffee drain through into your serving vessel.
  • Finishing Touch: Add 100ml of the remaining water from the kettle into the brewed coffee to balance the strength and enhance the flavors.
  • Final Stir: Stir gently to integrate the added water and enjoy a perfectly balanced cup of washed coffee.

Insight into the Recipe

Why Washed Coffee?
Washed coffee beans are famous for their clarity and clean taste, which makes them an excellent choice for showcasing the inherent flavors of the bean rather than the processing method.

Hario Switch and Its Advantages
The Hario Switch combines the immersion and drip brewing methods, offering better control over extraction and resulting in a more balanced and nuanced cup. Using it ensures you harness all the complexities a washed coffee can offer.

Importance of Proper Grinding
Using 15 clicks on the Kabuto grinder ensures a medium-coarse grind that's optimal for the Hario Switch, allowing for even extraction and reducing the risk of over-extraction or bitterness.
